Penang Chicken

• Heat oil in sauce pan on medium heat.

• Add curry paste and cook for 1 minute.  Add chicken and stir for 1 minute.  Add coconut milk and stir together (do not let boil).

• Add fish sauce, sugar and peanut butter.  Stir until smooth.  Simmer gently for 4 mins or until the chicken is cooked through (again do not let the sauce boil).

• Boil some water and blanch the broccoli and snow peas in boiling water for 2 mins.  Serve.
