Butter Chicken

• Chop chicken into 3cm pieces and add to a hot frypan for 3 mins or until golden brown. Chop onion, garlic, ginger and add to frypan with coconut oil.

  Turn the heat on low and add the remaining ingredients (except coriander leaves).  Cover and simmer on low for 40 mins.  Cook rice as per instructions on pack.  Serve.
